Toddler-approved, moist, quick and easy muffins

Total prep time: 20 minutes. Total cook time: 20 minutes.
Ingredients:
- 1 cup of peanut butter powder
- 1 cup of rolled oats (recommended) OR 1/2 cup of flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 3-4 ripe bananas (mashed)
- 6 Tablespoons unsalted butter (melted) (or melted coconut oil)
- 2/3 cup brown sugar
- 1 egg
- 1 teaspoon pure vanilla extract
- 2 tablespoons milk
** Cooking temperature and time based on a mini muffin sheet
** Bananas not ripe yet? No problem! Bake them (in the peel) at 350 degrees for about 10-15 minutes
- Preheat oven to 350 degrees
- In a bowl combine the dry ingredients (oats, peanut butter powder, baking powder, baking soda, salt, cinnamon, and nutmeg)
- In a separate larger bowl mash the bananas and then add in the melted butter (or coconut oil), brown sugar, egg, vanilla extract, and milk
- Pour the dry ingredients into the wet ingredients, beat or whisk until combined
- Optional: fold in nuts or chocolate chips
- Spoon into mini muffin pan
- Bake for 18-20 minutes
- Let cool for a few minutes and then transfer to a finish cooling on a wire rack
