Peanut Butter Banana Muffins

Toddler-approved, moist, quick and easy muffins

Total prep time: 20 minutes. Total cook time: 20 minutes.

Ingredients:

  • 1 cup of peanut butter powder
  • 1 cup of rolled oats (recommended) OR 1/2 cup of flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3-4 ripe bananas (mashed)
  • 6 Tablespoons unsalted butter (melted) (or melted coconut oil)
  • 2/3 cup brown sugar
  • egg
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons milk

** Cooking temperature and time based on a mini muffin sheet

** Bananas not ripe yet? No problem! Bake them (in the peel) at 350 degrees for about 10-15 minutes

  1. Preheat oven to 350 degrees
  2. In a bowl combine the dry ingredients (oats, peanut butter powder, baking powder, baking soda, salt, cinnamon, and nutmeg)
  3. In a separate larger bowl mash the bananas and then add in the melted butter (or coconut oil), brown sugar, egg, vanilla extract, and milk
  4. Pour the dry ingredients into the wet ingredients, beat or whisk until combined
  5. Optional: fold in nuts or chocolate chips
  6. Spoon into mini muffin pan
  7. Bake for 18-20 minutes
  8. Let cool for a few minutes and then transfer to a finish cooling on a wire rack
